Matta raw Rice / Payasam Rice: ½ glass
Milk: 5 glasses
Sugar: ¾ glass

1. Wash and soak the rice (½ glass) for ½ hour
2. Take 5 glasses of milk in a pressure cooker
3. Add ¾ glass of sugar
4. Make it boil
5. Transfer to the smallest burner and in low flame
6. Cook in law flame for 1 hour
7. Don’t let it whistle…
8. If you feel it will, turn off and turn on after few minutes
9. Turn off the flame after 1 hour, wait till the pressure ends by itself
10. Open the cooker…
11. You can see the milk has changed the colour.
12. Add rice with 1 glass boiling water to the milk
13. Check and add sugar if required
14. Make it boil
15. Again, in low flame for 30 minutes
16. Don’t let it whistle…
17. If you feel it will, turn off and turn on after few minutes
18. Turn off the flame after 30 mins, wait till pressure ends
19. Open the lid, mix and serve
