Chicken: 500 g (boneless)
Ginger: 1 inch
Green chillies: 3
Dried chillies: 3
Coriander leaves: ¼ cup
Eggs: 2
Pepper powder: 2 tsp

1. We have Chicken: 500 g (boneless), small pieces
2. Salt to taste
3. Black Pepper powder: 2 tsp
4. Green chillies: 3
5. Dried chillies: 3, crushed
6. Ginger: 1 inch chopped
7. Coriander leaves: ¼ cup
8. Egg whites: 2
9. You can adjust / replace the spices as per your taste
10. Add all except chicken & egg to mixer jar
11. Add salt to taste
12. Grind to a paste
13. Add chicken
14. Add egg white
15. Grind to a paste
16. To test – fry a small portion and taste
17. Adjust spices as you wish & grind again
18. Boil enough water, for 30 minutes of boiling
19. Take two layers of foil
20. A layer of parchment paper / butter paper
21. Place a portion of the mix
22. Roll it with the foil
23. Shape to a roll, Lock both ends tightly
24. Dip them in the boiling water
25. Let it boil for 30 minutes in medium flame
26. After 30 minutes, turn off the flame, keep for another 5 minutes
27. Cool salamis in ice water
28. Take them out, slice with sharp knife
