Mutton: 500g with bone
Ginger Garlic Paste: 2 TBSP
Rice (seeraka samba / Kaima): 2 cups
Coriander seeds: 1 tsp
Fennel seeds: ½ tsp
Cumin seeds: 1 tsp
Peppercorns: 1 tsp
Star anise: 1
Cardamom: 2
Bay leaves: 2
Cloves: 6
Cinnamon sticks: 1
Javathiri
Garlic: 8 cloves
Ginger: 1 inch
Green chillies: 2
Small onion (shallots): 200 grams
Tomatoes: 3
Chili powder: 1 tsp
Turmeric powder: a pinch
Mint leaves: handful
Coriander leaves: handful
Yogurt; 75 ml
Lemon juice: 1 lemon
Salt
Ghee
Oil

1. Heat ghee in pressure cooker
2. Add Mutton: 500g with bone
3. Add Ginger Garlic Paste: 2 TBSP
4. Fry mutton till it changes colour. Keep aside
5. Add to the mixer Coriander seeds: 1 tsp, Fennel seeds: ½ tsp
6. Cumin seeds: 1 tsp, Peppercorns: 1 tsp, Javathiri
7. Star anise: 1, Cardamom: 2, Bay leaves: 2
8. Cloves: 6, Cinnamon sticks: 1
9. Garlic: 8 cloves, Ginger: 1-inch, green chillies: 2
10. Grind to a fine paste with water. Keep aside
11. Coarsely grind small onion (shallots): 200 grams
12. Heat oil (4TBSP), Ghee (1 TBSP) in cooker
13. Add shallots (coarsely ground)
14. Sauté till it turns golden brown
15. Add Tomatoes: 3, chopped
16. Sauté till it turns soft
17. Add salt to taste and mix well
18. Add Chili powder: 1 tsp, Turmeric powder: a pinch
19. Add spice paste we made and sauté well
20. Add Mint leaves: handful, Coriander leaves: handful, mix
21. Add Yogurt: 75 ml and mix well
22. Add fried mutton pieces and mix well
23. Add salt to taste and mix well
24. Add water: 1 cup, make it boil
25. Cover and cook mutton well, 5,6 whistles
26. Wash and soak rice (2 cups) for 15 minutes
27. Once mutton is done, add water; 2 cups
28. Add salt to taste, a little more for rice
29. Add Lemon juice: 1 lemon
30. Make it boil and add soaked rice
31. Mix well, make it boil
32. Cover with a lid (NOT cooker cover) put some weight on top
33. Cook in low heat for 20 minutes
34. Turnoff flame, keep it open for a while
35. if water remains, keep it open, heat for some more time to remove it
36. Mix and serve
