Tasty Pressure Cooker Mutton Curry | Mutton Gravy for Idli

Mutton: 1 kg
oil:
coriander seeds: 2 TBSP
cumin seeds: 1 TBSP
peppercorns: 1 TBSP
fennel seeds: 1 TBSP
cinnamon sticks: 1 piece
cloves: 4
dried chilies: 6
grated coconut: 1/2 cup
small onion (shallots): 30
ginger: 2 inches
garlic: 10 cloves
tomatoes: 1
curry leaves:
green chili: 1
turmeric powder: a pinch

1. heat oil 1 TBSP
2. add coriander seeds: 2 TBSP, cumin seeds: 1 TBSP
3. add peppercorns: 1 TBSP, fennel seeds: 1/2 TBSP
4. add cinnamon sticks: 1 piece, cloves: 4
5. roast for a while. it gives a nice aroma
6. add dried chilies: 6

7. roast for a while
8. add grated coconut: 1/2 cup
9. roast all together. don't burn
10. transfer to a mixer jar
11. crush it to a coarse mix
12. heat oil 1 TBSP
13. add small onion (shallots): 20
14. add ginger: 2 inches, garlic: 10 cloves
15. sauté till onions turns light brown
16. add tomatoes: 1 chopped
17. sauté to make the tomatoes softer
18. add all these to the coarse mix in the mixer
19. add water as required grind all together to a smooth paste
20. Heat 2 TBSP oil in cooker
21. add fennel seeds 1/2 TBSP
22. add curry leaves
23. add green chili: 1
24. add chopped shallots: 10
25. sauté for a while
26. add mutton pieces: 1 kg
27. add a pinch of turmeric powder
28. add salt to taste
29. add the paste we made
30. add the paste we made
31. add water as required for the gravy
32. check and add salt as required
33. cover and cook mutton well
34. may take 6 to 7 whistles
35. once mutton is done well, sprinkle some coriander leaves
36. mix well and serve
