mutton: 1 kg
potatoes: 6
basmati rice: 2 cups
saffron: 25 mg
oil: 1/2 cup + 2 BSP
onion: 4 sliced
curd: 1 cup
garlic: 7 cloves
ginger: 3 inches
cumin powder: 1 TBSP
coriander powder: 1 TBSP
black peppercorns: 1 tsp crushed
turmeric powder: 1/2 tsp
cinnamon sticks: 1+1
cardamom: 4+4
cloves: 4+4
bay leaf: 2+2+2
salt: to taste
charcoal: 1 piece

1. soak saffron in 2 tsp water and keep aside
2. fry sliced onions in oil to golden brown and keep aside
3. add half portion of onions to the blender
4. add curd: 1 cup
5. add garlic: 7cloves, ginger: 3 inches
6. add cumin powder: 1TBSP, coriander powder: 1TBSP
6. add cumin powder: 1TBSP, coriander powder: 1TBSP
7. add crushed black pepper: 1 tsp, turmeric powder: 1/2 tsp
8. add cinnamon stick, cardamon:4, cloves:4
9. add salt to taste
10. grind to a fine paste
11. Continue with same oil, around 2 TBSP, in medium flame
12. add 2 bay leaves
13. add mutton in medium size pieces
14. stir for a while
15. add potatoes:6, large pieces
16. stir for a while
17. add spice paste and enough water for cooking
18. mix well
19. cover cook till mutton is 75% done
20. Boil water for cooking rice
21. Add oil: 2 TBSP
22. add cinnamon stick, cardamon:4, cloves:4
23. add 2 bay leaves
24. add rice 2 cups - soaked for 15 minutes
25. add salt to taste and mix well
26. cook till the rice is half done
27. drain off the water and keep ready
28. If required cook open and reduce mutton to a thick gravy
29. spread half cooked rice on top evenly
30. spread half cooked rice on top evenly
31. pour saffron water on top - in two lines
32. top with remaining fried onion
33. cover and cook in low heat for 30 minutes
34. smoke it for 5 minutes with charcoal and ghee/oil
35. mix and serve
36. its ready
