Rice (jeerakashala or similar) : 2 Cups
Onion: 2 medium size
Spices: cloves, cardamom, bay leaves, cinnamon sticks
Lemon: 1/2
Raisins and Cashew nuts to garnish
Ghee
Sunflower Oil

1. Wash rice, soak for 15 minutes and strain
2. Pressure cooker on the stove, turn on the flame
3. Add 1 tsp ghee
4. Add sunflower oil: 1 tbsp
5. Add onions: 1 medium sized
6. Sauté till it slightly brown
7. Add Spices: cloves: 4, cardamom:4, bay leaves:2, cinnamon sticks: 1 small piece, star anise: 2
8. Sauté for 2 minutes
9. Add soaked, strained rice: 2 cups
10. Fry the rice lightly till it starts spluttering
11. Add 3 cups boiling water
12. Add salt to taste
13. Mix well
14. Add lemon juice: ½ lemon
15. Mix and cook in medium flame
16. Turn off the stove, just before the second whistle, when 2nd whistle about to blow
17. Let it rest, don’t release the whistle, until the pressure goes off
18. Fry raisins and cashew nuts in ghee
19. Deep fry onions in ghee
20. No more pressure left in the cooker
21. keep the cooker open for 5 minutes
22. mix well
23. garnish with fried onions, cashew and raisins
24. it’s ready to serve
